Oolong (meaning “Black Dragon”) is a semi-oxidized tea. To understand its unique character, one must look at the spectrum of tea oxidation. Green tea is unoxidized, retaining its grassy, vegetative notes. Black tea is fully oxidized, resulting in a dark, malty brew. Oolong sits beautifully in the middle.
